Mutton curry with pajey madipula

I grew up eating this regional delicacy called ' Pajey Madipula/Pajey Madipela'.  The term is derived from  tulu  language where the word pajey translates to 'mat' and madipula means ' to fold'.

My aunt used to call it mandri bobo( in konkani) where mandri  refers to  a mat. 

These are simple rice rolls where rice batter is spread on banana leaf & rolled up like a mat & steamed.  Goes very well with any meat or fish curry. 

Here is a recipe for Pajey Madipula.


Ingredients:

  • 2 cups  boiled rice
  • Salt to taste
  • Water for grinding

Method:

Wash banana leaves & pat dry. Cut into required size  either square or rectangle pieces.  

STEP 1

Wash & soak boiled rice for 5-6 hours

STEP 2

Grind rice with salt to taste to a fine thick batter. 


STEP 3

Spread  batter on banana leaf as thin as possible. 

STEP 4

Roll like a mat. 

STEP 5

Steam in a steaming vessel for about 25-30 minutes. 

Steamed pajey madipula.


Serve with desired fish or meat curry. 


MUTTON CURRY

Recipe:

I have used 1/2 kg mutton.

Ingredients:

A  

For dry roasting:

  • 1 tbsp coriander
  • 1/2 tsp geera
  • 1/2 tsp pepper corns
  • 1 tsp cuscus/ poppy seeds
  • Pinch of mustard
  • Little turmeric
  • 4 cloves, 1" cinnamon
  • 1 cardamom
  • 1 star anise
  • 1tsp saunf/ fennel seeds
  • 1 cup freshly grated coconut. 

B

  • 2 medium onions
  • 6 flakes of garlic
  • 1/4 inch ginger
  • 4-5green chillies( use as per your choice)
  • 1 large tomato. 
  • Handful of coriander leaves
  • Handful of mint leaves

C

  • 1/2 cup curds
  • Tamarind
  • Salt to taste

Method:

STEP 1

Dry roast all ingredients one by one mentioned under A

STEP 2

Roast onion, garlic, ginger and chillies with 1 tbsp oil.  Roast well. Add tomato. Fry for 1 minute.  Add mint & coriander leaves at the end and just toss. Slightly cool this & grind along with other dry roasted ingredients. Add tamarind while grinding.

STEP 3:

Marinate washed & cleaned mutton pieces with  1/2 cup curds & salt to taste and keep aside for 1-2 hours. 

STEP 4:

Cook mutton in pressure cooker for 10-15 minutes. Cooking time depends on the quality of meat. 


STEP 5:

Heat 2 tbsp ghee in a cooking vessel. Add 1 medium sliced onion. Fry till golden brown. Add masala & fry for 2-3 minutes. 

Add masal water. Cooked meat , salt to taste & cook till done. 

Delicious mutton curry is ready.
