Kube Mutlin/ Marwai Pundi / Rice dumplings in Clams curry. 




How many of you love this authentic mangalorean monsoon delicacy?  

Clams in konkani are known as 'kube' & in tulu language its called as 'Marwai'.  

It's a super delicious coconut gravy with clams and  steamed rice dumplings ( pundi/ mutlin). This tasty gravy has a unique flavour of clams which makes this dish so special. The whole house is filled with the aroma of clams cooking in the roasted spices coconut gravy & rice dumpling. 

My mom used to cook this often & we used to enjoy this a lot. Its one of the most loved traditional dishes in my house too.  

This recipe is time consuming as we have to steam rice dumplings well in advance. For rice dumplings you need to soak boiled rice, grind to thick paste, prepare dumplings & steam. 

Please note:
1. Here i have followed the easy way of preparing dumplings with pathiri powder. ( YouTube video enclosed) Same procedure is used for these tiny dumplings but without grated coconut. 
2. The quantity of coconut & spices depends on the quantity of curry you need to prepare.  Use spices as per your preference.  

Recipe for rice dumplings:

Ingredients for mutlin:

  • 1/2kg boiled rice( soaked for 5-6 hrs)
  • Salt to taste

Method: 

Grind rice to thick paste. Add salt. Put this in a pan & slightly heat ,so that it will become thick & after cooling its easy to prepare mutlin. 

Mom used to steam in thandoor for 5 mnts to get right consistency.  But this method is very easy. 
Prepare small mutlin & steam for 30 mnts. Keep aside. 

Rice dumplings made with pathiri powder 

(Here i have followed easy way of no soaking, no grinding recipe of rice dumplings. I used pathiri powder for preparing the dumplings)

Clams/marwai/kube:


Select fresh clams. ( I used 1 kg clams)
Wash & rinse the clams atleast 4-5 times. Add 1 tbsp salt & soak in water for 1/2 an hour. 


Discard all the opened clams. 


Wash again & keep aside. 


For Masala: 

Ingredients:

1.
  •  6-8 red long chillies, 
  •  4-5 red short chillies, 
  •  2tbsp coriander, 
  • 1tsp jeera, 
  • 1tsp pepper, 
  • pinch of mustard, 
  • pinch of fenugreek- dry roast all the above

2. 
Roast 2 big sliced onions, 5 garlic flakes, 1/4 cup coconut with 2 tsp oil. 

Method:




Grind 1& 2 along with 2-3 cups of grated coconut, little tamarind, & turmeric. Use coconut as per  your requirements. 
I ground coconut separately as we need more masala for the gravy. 


In a deep wide pan fry 1 sliced onion with 2-3 tbsp ghee till golden brown.

 

Add ground masala, fry for 2-3 mnts.

 


You need more gravy for this dish. So add required quantity of water . Boil well.  Add salt. 

Add clams. 



Take a good boil & allow the clams to open.  Do not stir till all the clams are opened in the gravy. 



Add boiled mutlin .  Mix gently & take a good boil.  


Delicious  kube mutlin is ready.

  
This dish tastes awesome on the 2nd day when the dumplings absorb all the gravy and flavour of clams
