Juicy Pan Roasted Chicken 


This pan roasted chicken is my no fail recipe which i have been preparing from many years. 

Simple variations in the marination gives the juiciest chicken which i am sure your family members will fall in love!

It's super juicy, flavourful and so yummy!!

This is a simple, easy, super delicious recipe which any beginners can try easily with very few basic ingredients available at home. 

My family loves this flavourful juicy chicken with biryani, ghee rice or veg/ nonveg pulao.

Flavourful seasoning, marination period and perfect cooking time gives an excellent results!

This could be the best choice for weekend menu. 

The aroma of roasted chicken spread all over the  kitchen makes you fall in love with this super juicy chicken.

Please note:

Here, i have added chillies and spices as per my choice . Kindly use the spices as per your preference. 

I have added potatoes and carrots which my family loves. You can add any veggies of your choice or can skip this. 

You also can add any other favourite spices to make this recipe more interesting. 

Here is a simple, easy recipe which gives excellent results. 

Recipe:

Ingredients:


1 kg whole chicken around 850 gms

Ingredients for the marination:

A. 

  • Juice of 1 lemon 
  • 3 tbsp olive oil 
  • 2 tbsp mustard paste 
  • Salt to taste 

B.

  • 8-10 kashmiri chillies 
  • 2-4 red long chillies 
  • 1 pod garlic
  • 1 tsp pepper corn

Method:


Use cleaned medium size whole chicken . Wash thoroughly & pat dry. Use a sharp knife and make incisions all over the chicken. Place the chicken in a nonstick cooking pan or any cooking pot. 

Add all the ingredients (mentioned under A) to the chicken .

Put all the ingredients  mentioned under B to the grinding jar & make a  coarse paste  without water. 

Add this paste to chicken and rub all over the chicken. Keep it aside for 1-2 hrs or overnight. 

Add 1/2 cup water. Cook on a slow flame for 12-15 minutes. 

Gently flip over, cover & cook for another 10-12 minutes. 

Add potatoes, carrots ( optional) . Cover and cook till all the water dries up and the masala is well coated to the chicken. This will take another 12-15 minutes.
 
Super delicious chicken roast is ready to serve. 

Serve it as a starter or side dish with any meal. 

Tastes awesome with chicken yakhni pulao.
