Methi Malai Chicken
This is a restaurant style creamy, rich , tasty curry made with chicken and fresh methi leaves.
This super delicious chicken curry has a rich creamy texture and a unique flavour of methi/Fenugreek leaves.
This dish goes extremely well with naan, roti, kulcha, paratha or chapati. Tastes even better with any pulao or ghee rice.
My family loves this with wheat parathas and ghee rice.
Very few basic ingredients are required for this recipe. Please go through this quick & easy recipe.
Please note:
Use masala powders as per your choice.
I have added roasted potato pieces here. You can skip if you wish.
You can add few carrot pieces & fresh green peas too.
Use required quantity cream as per your choice.
Ingredients:
1 kg chicken
Ingredients for chicken marination:
- 1 tbsp kashmiri red chilly powder
- 1 tsp pepper powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1 cup curds
- 1 tbsp ginger garlic paste
- 1/2 tsp garam masala powder
- Pinch of kasoori methi
- Salt to taste
- Little lemon juice
Ingredients for the curry:
- 1/2 cup coconut
- 8-10 cashews nuts
- 2 medium size potatoes (optional)
- 1 large finely chopped onion
- 1 tsp ginger garlic paste
- 2 green chillies
- 1 tsp garam masala powder
- 1 bunch meethi leaves
- 1 tbsp ghee
- 1 tb sp oil
- 1/2 cup whipped curd
- 1/4 cup cream
- Little crushed kasoori methi
- 1/2 tsp garam masala powder
- 1/2 tsp fennel seeds powder
- Little coriander leaves
- Salt & pinch of sugar to taste
Method
Marinate cleaned chicken pieces with all the above mentioned ingredients( ingredients for chicken marination) &
keep aside for 1 hour.
Soak cashew nuts in 1/2 cup water & grind along with coconut & little water to a fine paste.
Wash methi leaves very well atleast 3-4 times & finely chop. Add 1/2 tsp salt & mix well. Keep aside.
Squeeze all the water & fry in 1 tbsp oil for 3-4 minutes.
Wash & clean potatoes. Peel the skin. Cut into required size pieces. Add little salt & pepper & fry for 2-3 minutes. I have roasted them in the air fryer.
Heat 1 tb sp ghee + 1 tbsp oil. Add finely chopped 1 large finely chopped onion, fry till slight brown. Add ginger garlic paste, gree chillies & mix well for 1 minute.
Add chicken pieces & fry for 3-4 minutes.
Add whipped curd, mix well. Add little garam masala powder .
Add little kasoori meethi, cashew paste, water & cook for 6-8 minutes.
Add fried methi & mix well. Cook for another 2 minutes.
Add garam masala & fennel seeds powder. You can add little pepper powder too.
Add fresh cream.salt & sugar to taste. Mix well & take a good boil.
Add roasted potatoes, garnish with coriander leaves.
Super delicious, rich, creamy methi malai chicken curry is ready to serve.
Serve hot with paratha, naan, roti or chapati.
Tastes awesome with ghee rice too.
