Tender Coconut Pudding

Tender Coconut Pudding 


I tasted this yummy coconut pudding in a restaurant for the 1st time & i truly fell in love with this dessert. 

This mildly sweet  dish  had an subtle coconut flavour in every bite & a unique taste which made me to try this at home. 

This is the easiest and tastiest pudding i have tried so far with just four ingredients. Best treat for your family for this hot season! 

It's creamy, moist and so yummy!

Felt very happy when my son complimented saying this one tasted  much better than the restaurant one! 

The main ingredient in this pudding is a tender coconut pulp. You can use either fresh ten coconut pulp or a ready made frozen tender coconut pulp. 

China grass/ Agar agar 


Here i used China grass which is also called as agar agar as a setting agent. You can use gelatin instead. 

China grass, is a healthy alternative to gelatin. China grass (Agar agar) is a jelly like substance extracted from sea weed.

Any dish which has China grass as the setting agent doesn't even needs refrigeration. It doesn't melt once set. China grass is available in powdered form and also in dried strands.

Here I have used dried strands. 

Recipe is very simple & easy with very few basic ingredients. 

Please note. 

You can add fresh tender coconut pulp or ready made tender coconut pulp. 

Ready made pulp has added sugar . So kindly add only required quantity sugar for the dish. 

You can use little vanilla essence if you wish. But i prefer subtle flavour of tender coconut. 

I have used this ready made tender coconut pulp. 

Recipe:

Ingredients:

  • 400 ml milk
  • 4-5 tb sp sugar 
  • 5 gm china grass/ agar agar
  • Pulp of 1 -2 tender coconut or 3 tbsp ready made tender coconut pulp 
  • Few dry fruits (optional)

Method:


Wash 5 gram china grass & keep it aside. 

Add milk to the cooking vessel & boil.
 
Add washed china grass & stir well till it gets dissolved in the milk. 

Add required quantity sugar. Mix well. 
Switch off the flame. 
Leave aside for 2 minutes. 

Add ground or crushed tender coconut pulp. 

Mix well. 

Pour this mixture into any desired greased moulds. 

Allow it to cool. 
Refrigerate for 1 -2 hrs. 

Loosen the edges , keep a plate above & slowly turn it upside down. 

Delicious , super moist, creamy coconut pudding is ready to serve. 

Sprinkle some nuts on top & serve chilled. 

Cut & serve chilled. 

This moist pudding just melts in the mouth. 

Prepare this delicious dessert & enjoy with your loved ones.
