Mandas/ Cucumber Rice Cake
Mandas is one of the most enjoyed traditional sweet dishes during our childhood days.
This sweet requires very few basic ingredients & is one of the most loved mangalorean delicacies.
The key ingredient is cucumber which gives authentic taste & flavour to this dish.

This recipe is my hubbys most favourite one & he can relish this anytime.
This is a quick & easy method of preparing delicious mandas in a pan which has a golden crust on both sides & a soft delicious texture in the middle.
This golden crispy outer crust & soft delicious inner part reminds me my childhood days when mom used to prepare this on wood fire, with fire on top & bottom. This is called voir ponda uzo ghaln Mandas. This dish tasted exactly like mandas prepared on wood fire.
Super quick , so flavourful and truly so delicious!
Please note:
I Used 150ml cup for the measurement.
I used 8" nonstick pan for this recipe.
Cook this dish on a very low flame to get awesome results.
I didn't peel the skin of the cucumber as it was very tender. I didn't remove the seeds too. You can peel the skin if you wish & can remove the seeds if it is not tender.
Use jaggery as per your choice.

- 1 cup dosa rice/ raw rice
- 1 cup coconut
- 3/4 cup cooked rice
- 3/4 cup jaggery ( as per your choice)
- 4 cardamom
- 1 medium size cucumber ( chopped)
- 2 tsp ghee
- Salt to taste

Instead of nonstick pan, you can pour the batter on a banana leaf in any cooking vessel and prepare this delicious sweet.
Just place the banana leaf neatly in any wide cooking vessel. Make sure that the leaf is not broken and covered well on all sides. Put 1/2 tsp ghee & spread well.
Pour the batter, cover and cook for 20-25 minutes on a very slow flame. No need to flip over.
This mandas tastes much better as it absorbs banana leaf's aroma too.
Crispy roasted at the bottom and soft, spongey on the top! This has a unique flavour and taste! So yummy!!
