Kuvalo Bafat/Ash Gourd Bafat Curry
This is a flavourful ,tasty ash gourd curry recipe which I learnt from my post natal care taker(Balnthi postheli).
Ash Gourd is called as' Kuvalo' in Konkani.
This dish has a unique flavour and taste which can be enjoyed with boiled rice or with chapati, sanna, dosa & neer dosa/panpole.
All you need is few basic spices available at home, and coconut milk.

Instead of Bafat powder you can use 2 tsp red chilly powder, 1 tsp coriander powder & 1/2 tsp jeera powder, 1/4th tsp garam masala powder.
Instead of coconut milk, you can use ground coconut paste too for this recipe.
Recipe:
Ingredients:
- 1/2 kg Ash Gourd
- 2 medium size onions ( diced)
- 2 green chillies ( slit)
- 1/4" chopped ginger
- 6 flakes of garlic
- 2 -3 tsp bafat powder
- 2 tsp tamarind pulp
- 1 " piece cinnamon
- 2 bay leaves
- 2 cloves
- 1 medium size coconut
- Salt to taste
Seasoning Ingredients:
- 1 tbsp ghee
- 1/2 onion ( sliced)
Method:
Wash & clean ash gourd. Peel the skin & cut into medium size pieces.
Grind coconut & extract milk. Keep the 1st, 2nd & 3rd extracts seperately.
Add 3rd extract of coconut milk to the ash gourd , add all the chopped ingredients mentioned above, add tamarind pulp, cinnamon, cloves & bay leaves.
Add salt to taste, Bafat powder, mix well & allow it to boil.
Cook on a medium flame till half done. Add 2nd extract & cook till the ash gourd turns slightly translucent.
Add 1st extract of coconut milk & take only one good boil & put off the flame.
Fry sliced onion in ghee till brown.
Serve with boiled rice or with neer dosa, sanna, bread or chapati.
