Mutton Jeera rice Biryani

Try this droolworthy , super delicious mutton biryani with jeera rice!

Biryani is usually prepared with Basmati rice but this unique biryani is prepared with jeera rice hence it's called as Donne Biryani.


Jeera rice is a short grain rice and has a unique flavour and taste which makes this dish so aromatic and super delicious. 

Here , the rice is cooked along with the meat  to absorb all the spices and flavours of meat & broth , resulting  in a super delicious, moist, aromatic biryani. 

The taste and the aroma of this biryani is so good that it will make you fall in love with this recipe. 

This is one of the favourite dishes of my hubby. 

Kindly go through the note and follow the step by step recipe. 


Please note:

. Use spices and masala powders as per your spice requirements. 

. Cooking time of mutton depends on the quality of meat. Tender mutton cooks faster. 

. Curd used in the marination  helps to tenderize the meat. 

. I have used only 2 tbsp ghee as there is a natural fat in mutton. You can add more ghee for a richer version. 

. Measurements for rice & water is 1:2. ( i.e for 3 cups of rice , use 6 cups of water)

. Measure the rice in a cup & use the same cup for measuring the water+broth. 

. Since we are using mutton broth here, measure the broth and add only required quantity water. 

Recipe:

Ingredients:

  • 3/4 kg mutton
  • 1 cup curd
  • Salt to taste

Ingredients for the masala:

  • 2 large sliced onions
  • 7 green chillies( as required)
  • 2" ginger
  • 12 garlic flakes
  • 1/2 lemon size tamarind
  • 4 cloves
  • 2 cardamoms
  • 2 cinnamon sticks
  • 2 tsp fennel seeds
  • Small piece of mace
  • Smal piece of nutmeg

Other ingredients:

  • 2 tbsp ghee
  • 1 large sliced onion for seasoning
  • 1 tbsp red chilli powder ( as required)
  • 1/2 tsp turmeric powder. 
  • Juice of 1 lime
  • 1 cup chopped coriander+ mint leaves
  • Salt to taste 
  • 3/4 kg jeera rice ( 3 cups of rice)

Method:


Wash mutton pieces and add curd, salt to taste. Mix well & keep aside for 5 hours. Overnight is better. 

Wash & soak jeera rice for 1/2 an hour. Drain & keep aside. 

Grind all the masala ingredients to a fine paste. 

Heat 2 tbsp ghee in a pressure cooker and add 1 large sliced onion. Fry till brown. 

Remove half the fried onions ( for garnishing  purpose) and retain half in the pressure cooker. 

Add ground masala paste and fry for 3-4 minutes. 

Add marinated meat. Mix well and fry for 2-3 minutes. 

Add red chilly powder, turmeric powder.  Mix well

Add masala water, salt to taste & mix well. 
Cover & cook for 15 -20 minutes. 
( tender meat cooks faster)

Delicious meat is ready. 

Remove the meat & keep it aside.  

This top layer of floating fat  in the broth is called as Rogan. Remove 1/2 cup Rogan and keep aside. 

Transfer the remaining broth to a larger vessel. Measure the broth. 
(I got 3 cups of broth)

Now add another 3 cups of water . So total 6 cups of water+broth is used here. 

Add juice of 1 lime. Chopped mint + coriander leaves. Salt to taste. Mix well. 

Now add cooked meat and take a good boil. 

Add the drained rice. Mix well. 

Cook on a high flame for 2-3 minutes. 

Reduce the flame, mix the rice  well & cook for another 6-8 minutes.

Now add Rogan, mix well. Cook for 2 minutes. 

Switch off the flame and leave aside for another 10-12 minutes. 

Sprinkle reserved fried onions. 

Delicious Mutton Jeera Rice Biryani is ready to serve . 

Serve hot with cucumber raita and any fried meat( optional).
