No oven jaggery wheat cake


I never thought that i could prepare such a delicious, healthy cake without oven! 

No sugar, no eggs, no butter, no all purpose flour! 

It's a very healthy stovetop cake. 

Anyone can prepare such type of cake as it doesn't need oven or any expensive ingredients. 


Here i used cold pressed virgin coconut oil. You can use any neutral oil which has  very little or no flavour. 


Tutti fruti and dry fruits used in this recipe are purely optional. You can use any of your favourite dry fruits. 

This could be the best tea time  healthy snack. 

Please note:

.Use jaggery as per your taste. 

.Make sure to use a heavy bottom vessel which can hold cake tin and which has a  tight lid to hold the heat. 

.Never place the cake tin directly on the bottom of the pot which can burn the cake base. 

.Make sure to place a metal ring, plate or a stand in the centre of the pan. 

Here is a quick and easy recipe:

Recipe:

Ingredients:

  • 1 cup wheat flour ( 150 ml cup)
  • 1/2 cup jaggery( grated)
  • 1 cup milk
  • 3 tbsp virgin coconut oil
  • 1/4 tsp vanilla essence
  • 1/2 tsp baking powder
  • Pinch of baking soda
  • Pinch of salt
  • 1/4 cup tutti fruti
  • Few dry fruits for garnishing

Method:


Dry roast wheat flour for 2-3 minutes & keep aside to cool. 

Add 1/2 tsp wheat flour to tutti fruti. 

Mix well & keep aside. 

Add 1 cup milk to grated jaggery & mix well till all the jaggery gets dissolved into the milk. 

Add oil & mix well. 
Add vanilla essence. Mix & keep aside. 

Meanwhile heat any  heavy bottom vessel on a slow flame. Place a metal ring or a stand in the middle.  
Cover & keep on a slow flame. 

Sieve wheat flour, baking powder, salt and baking soda.   

Add this to jaggery mixture. 

Mix well till everything is combined. 

Add  tutti fruti & mix gently. 

Grease the baking tin or any steel bowl. 

Pour the batter into the greased baking tin. 

Sprinkle few dry fruits of your choice. 

Keep this vessel in the preheated cooking pot.  Place it above the ring. 

Cover & cook on a very slow flame for about 35 minutes. 

Insert a skewers and make sure it comes out clean.
 
Allow it to cool. 

Delicious , healthy jaggery  wheat cake is ready.

Make sure to cook on a very low flame to avoid burning.
