Mom's recipe! 

I grew up eating this traditional  mangalorean delicacy  as my grandmother  and most of our relatives from villages often used to get field marrows from their  farms. 

My mom used to prepare different curries with field marrow & this is one of the tastiest curries.

A good quantity of horse gram boiled  water is used in this recipe. So, whenever i prepare this curry, i prepare kultache ladoo ( horse gram laddu,) from the leftover boiled horse gram . 

These laddus are truly so delicious and nutritious. They are also called as energy balls as they are a great source of protein.

Kulta kaat/ Horse gram and field marrow curry 

Recipe:

Ingredients:

  • 1 cup horse gram( 200 gms)
  • 1 medium size field marrow
  • Small piece of jaggery ( optional)
  • Ingredients for the masala:
  • 1/4 tsp jeera
  • 1/4 tsp pepper
  • Pinch of mustard
  • 1-2 red short chillies ( guntur)
  • 2 byadagi chillies
  • Pinch of turmeric
  • 1/4 lemon size tamarind
  • 2-3 garlic flakes
  • 1 large onion
  • 2 tbsp coconut

Ingredients for seasoning;

  • 2 tbsp ghee
  • 1/2 medium size sliced onion
  • 4 crushed garlic flakes

Method:


Dry roast horse gram till the colour changes to light brown. 

Wash the the field marrow and cut it into half and then quarters, remove the pith & seeds and then cut into small cubes.

Grind all the masala ingredients to a 
fine paste. 

Add the roasted horse gram to a pressure cooker . Add 2 -3 cups of water & Cook  for 10-12 minutes. (6-8 whistles)

Once the pressure  is released on its own, drain the water.  Remove 2-3 tbsp of boiled horse gram seperate to add for the curry. 

(* Rest of the boiled horse gram is used for preparing laddus)

In the same boiled water, add cubes of field marrow, ground masala paste, 2-3 tbsp cooked horse gram , salt to taste & mix well.  Pressure cook for only one whistle.  Allow the cooker to cool. 

In a cooking vessel, heat ghee. Add sliced onion & crushed garlic. Fry till brown.

Add cooked field marrow to the seasoning. Add a piece of jaggery, mix well. Take a good boil.

Delicious kulta kaat is ready. 
Serve hot with boiled rice.

Best enjoyed with boiled rice & fried fish.

Please note:

This curry turns very spicy if more chillies are added. So kindly add chillies as per your choice. 

You can also add 1 tbsp boiled horse gram to the masala & grind to obtain thickness. I prefer adding 3 tbsp boiled horse gram to the curry. 


Kultache laadoo/ Horse gram Laddu 

Recipe:

Ingredients:

  • 1 cup boiled horse gram
  • 1/2 cup coconut
  • 1/2 cup grated jaggery ( as needed)
  • Little cardamom powder. 

Method:


Add coconut & jaggery to the mixer grinder jar. 

Add boiled horse gram,  cardamom powder  & pulse it for 15-20 seconds. ( do not add any water).

Laddu mixture is ready. 

Remove this mixture to a bowl. Mix well & roll out laddus. 

Delicious horse gram laddus are ready to serve. 

Consume it on the same day or refrigerate the leftover laddus and consume within 2 days. These laddus do not have much shelf life as fresh coconut is added.
