Raw mango is used in many recipes. I just love to add raw mango pieces in different dishes to get that natural tanginess. 

Fish curry tastes heavenly when few pieces of raw mangoes are added to the curry. 

It can also be used in different vegetarian dishes, chutneys and salads. 

But unfortunately raw mangoes are not available throughout the year.  

How to preserve raw mangoes ?

Whole raw Mangoes can be preserved in the freezer for future use. But, I prefer sun dried raw Mangoes in my cooking. 

Here is a simple method to preserve  raw mango pieces for future use. 

Select good quality raw mangoes. 

Wash thoroughly & wipe with a clean dry cloth. 

Slice them evenly.

Sprinkle little salt( optional).
Spread it on a paper napkin or a clean dry cloth.  
( I don't add any salt)

Place these slices in a bright sunny area for 3 days. 
Turn the sides every once in 4 hrs. 

2nd day. 

After 3 days. 

Store them in a clean ziplock pouch. 
Whenever needed, just wash well & use. 

Tastes awesome when added to any fish curry. 

Tastes delicious with any vegetables dish. ( Especially mangalorean veg thel piao dish). Just add few pieces for vegetables while boiling. 

Just add few pieces while boiling dal. Tastes awesome!! 

You can use it for chutney too.
