Refreshing Chickpea salad


Days are getting hotter and hotter! Craving for some light refreshing meal? 

Try this nutritious, power packed, refreshing, crunchy chickpea salad with loads of fresh veggies and fruits. 

This is my family's favourite summer treat! 

This can be enjoyed as a best side dish with any meal or  could be served as a healthy light meal too. 

I have used few fresh veggies and fruits of my preference. You can add any desired veggies or fruits. You can even add few dry fruits  or boiled meat or stir fried paneer to this delicious salad to make it more nutritious. 

Make sure to add fresh crunchy veggies to give  yummy taste and crunch to this dish. 

Please note:

Kindly use veggies and fruits as per your choice. 

I have used dried herbs ( oregano, basil & Thyme ) for dressing. It's optional. You can add little chat masala too. 


Here i have used black chickpeas . You can use the same or kabuli chana/ white chickpeas. Soak chickpeas overnight and boil well in the pressure cooker. Drain & keep aside. 


Recipe:

Ingredients:

A. 

  • 1 cup boiled chickpeas
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped green apple
  • 1/2 cup bell pepper
  • 1/2 cup purple cabbage 
  • 1/4 cup chopped tomato
  • 1/4 cup chopped onion
  • 1/4 cup chopped mango
  • 1/4 cup pomegranate
  • 1/2 cup grapes
  • Little coriander leaves. 

B. Ingredients for salad dressing:

  • 2 tbsp olive oil
  • Juice of half lime
  • 1tsp pepper powder
  • Pinch of jeera powder
  • 2 tbsp honey
  • Little black salt 
  • 1/4 tsp mixed dried herbs ( optional)

Method:


Chop all the required veggies and fruits & keep aside. 

Mix all the ingredients under B. 

Salad ingredients are ready. 

In a wide mixing bowl, add all the chopped ingredients. Add salad dressing. 

Mix well and serve immediately. 
Delicious, crunchy , chickpea salad  is ready. 

Bowlful of this delicious salad can be served as a healthy meal.
