Refreshing Chickpea Salad

Refreshing Chic kpea salad Days are getting hotter and hotter! Craving for some light refreshing meal?  Try this nutritious, power packed, refreshing, crunchy chickpea salad with loads of fresh veggies and fruits.  This is my family's favourite summer treat!  This can be enjoyed as a best side dish with any meal or  could be served as a healthy light meal too.  I have used few fresh veggies and fruits of my preference. You can add any desired veggies or fruits. You can even add few dry fruits  or boiled meat or stir fried paneer to this delicious salad to make it more nutritious.  Make sure to add fresh crunchy veggies to give  yummy taste and crunch to this dish.  Please note: Kindly use veggies and fruits as per your choice.  I have used dried herbs ( oregano, basil & Thyme ) for dressing. It's optional. You can add little chat masala too.  Here i have used black chickpeas . You can use the same or kabuli chana/ white chickpeas. Soak chickpeas over

Sun dried Raw Mangoes

 Sun dried Raw Mangoes  Raw mango is used in many recipes. I just love to add raw mango pieces in different dishes to get that natural tanginess.  Fish curry tastes heavenly when few pieces of raw mangoes are added to the curry.  It can also be used in different vegetarian dishes, chutneys and salads.  But unfortunately raw mangoes are not available throughout the year.   How to preserve raw mangoes ? Whole raw Mangoes can be preserved in the freezer for future use. But, I prefer sun dried raw Mangoes in my cooking.  Here is a simple method to preserve  raw mango pieces for future use.  Select good quality raw mangoes.  Wash thoroughly & wipe with a clean dry cloth.  Slice them evenly. Sprinkle little salt( optional). Spread it on a paper napkin or a clean dry cloth.   ( I don't add any salt) Place these slices in a bright sunny area for 3 days.  Turn the sides every once in 4 hrs.  2nd day.
