Healthy Christmas Cake
My hubby just loves rich dry fruit Rum cake( Christmas cake). I keep trying healthy options to feed him some tasty, nutritious and totally guilt-free snacks.
This time i tried this healthy Christmas cake with no maida, no butter & no sugar.
It's healthy, nutritious & totally safe for any diet concious people.
Here i have used molasses for colour. You can add sugar caramel instead.
You can add any of your favourite dry fruits. I have used dates, tutti frutti, raisins, almonds, cashewnuts and walnuts.
I have added only 1/4 cup honey as I added dryfruits which contains natural sweetness and molasses too which is naturally sweet. You can increase or decrease the quantity of any of these.
Try this delicious cake. It's a totally guilt-free treat to your loved ones.
Recipe:
I have used 200ml cup for measurement
Ingredients:
A. Wet ingredients:
- 3 eggs
- 1/4 cup honey
- 1/4 cup virgin coconut oil
- 2 tbsp molasses/caramel
- 5 drops of vanilla essence
- 4 drops of orange extract ( optional)
B. Dry ingredients:
- 1&1/2 cup oats
- 1/2 tsp cinnamon powder
- 1/4 tsp all spice powder
- 1 tsp coco powder
- 1/2 tsp baking powder
- Pinch of baking soda
- Pinch of salt
C.
- 1 cup mixed dry fruits.
- 1 tbsp rum( optional)
- Little lemon zest
- 1 tsp wheat flour
Method:
Mix all the dry fruits(mentioned under C). Add 1tsp Oat flour, mix & keep aside.
Dry roast oats for 2-3 minutes.
Add to grinding jar & make fine powder.
Mix all the wet ingredients. Keep aside.
Mix all the dry ingredients & keep aside.
Now add the dry ingredients to the wet mixture. Mix well.
Add all the dry fruits. Mix well.
Pour the mixture to a greased baking tray.
Bake it in a preheated oven at 180°C for 35 Minutes.
Insert a skewer & make sure it comes out clean.
Cool & slice as per your choice.
It's healthy, moist & truly so delicious.
