Mutton Polov
This is a traditional Mangalorean delicacy , typically served at Roce ceremonies along with other dishes.
'Roce ceremony ' is a pre wedding ritual among mangalorean catholic community which is celebrated by anointing the bride & groom with freshly squeezed coconut milk.
Mutton Polov is one of the favourite dishes of my beloved mom & I still feel her presence while roasting the spices. The divine aroma of this dish is simply amazing.
This dish goes extremely well with hot boiled rice, chana sukka or raw plantain sukka with any pickle.
This combo is one of the most loved combos among my family members too & relished especially during cool monsoon days.

Please note:
Use spices as per your preference. We prefer less spicy food
Recipe:
Ingredients:
- 1/2 kg mutton
- 1/2 kg Ash gourd
Ingredients for Masala:
A.
- 3-4 red short chillies ( guntur)
- 2 red long chillies (byadagi)
- 2 tbsp coriander seeds
- 1/2tsp cumin seeds
- 1/2tsp pepper
- 1/2 tsp raw rice
- Pinch of mustard
B.
- 5-6 flakes of garlic
- 1 large onion
- 3 tbsp coconut
C.
- 1/2 small size coconut
- Pinch of turmeric
- Little tamarind
For seasoning:
- 1 medium size sliced onion
- 2 tbsp ghee
Method:
Clean & cut mutton into required size pieces. Add salt, 1/2 cup water & pressure cook for 20-30 minutes ( cooking time depends on the quality of meat. Tender mutton cooks faster)
Dry roast all the ingredients under A & B one by one.
Grind all the roasted ingredients along with ingredients under C.
Wash, peal & dice ash gourd & keep aside .
Heat 2 tbsp ghee for seasoning. Add sliced onion & fry till brown.
Add ground masala paste.
Fry for 1 minute.
Add masala water & mix well. Do not add more water.
Add ash gourd pieces, salt to taste & mix well & boil till half done.
Add boiled mutton along with boiled water, salt to taste & mix well. Cook for another 3-4 minutes.
Delicious Mutton Polov is ready to serve.
Goes extremely well with boiled rice & raw plantain sukka with a dash of pickle.
Goes well with chana sukka too.
