Fish biryani
My family's most favourite meal is biryani. I usually prepare chicken , mutton or paneer biryani .
But whenever i get huge king fish or butter fish fillets, i prepare this super delicious fish biryani. The whole spices, garam masala & other spices added to prepare this mouthwatering fish biryani.
I have used king fish slices for this biriyani. You can use any huge fish slices or cubes or fish fillets for this recipe.
A good quality basmati rice, good quality safron & biriyani masala powder and fresh fish pieces are very essential to make perfect fish biriyani.
Recipe is quite time taking but the end result is mouth watering!
Fish slices needs to be fried to perfection & handled very gently while assembling the biriyani layers.
Follow these 5 steps & enjoy this yummy fish biryani.
Kindly use spices as per your preference
Recipe:
1. Ingredients for fish marination:
- 8-10 fish slices.
- 1/2 cup curds
- 1 tbsp ginger garlic paste
- 2 tbsp kashmiri chilli powder
- 1/2 tbsp coriander powder
- 1tbsp garam masala powder
- 1 tsp cumin powder
- Salt to taste
- Lemon juice
- 2 tbsp oil
- Few curry leaves chopped
2. Ingredients for fish broth:
- Fish head & tail parts
- 1 onion chopped,
- 1 tomato chopped,
- 1 cardamom, 3 cloves, 1 cinnamon
- 1 bay leaf, 1 star anise
3. Ingredients for the gravy:
- Leftover marinated paste
- 1 cup curd
- 1/2 tsp kashmiri chilli powder
- 1/2 tsp garam masala powder
- 1/2 tsp biriyani masala powder
- Few coriander & mint leaves
4. For garnishing:
- 2- 3 tbsp ghee/oil
- 2 large sliced onions
- Few dry fruits ( optional)
5. For biriyani rice:
- 2 cups of basmati rice ( 200ml cup)
- 3 cloves, 1" cinnamon
- 3 cardamom
- 2 bay leaves
- Pinch of fennel seeds
- 1/4 cup safron water
- 1 tbsp ghee
Method:
Step 1:
I used 2 kg king fish/Seer fish/Surmai
Reserve the head & tail for broth.
Cut required size slices & keep aside.
Mix all the ingredients under 1.( For marination)
Apply this paste to cleaned fish slices & keep it aside for 1 hour.
Step 2: Fish broth
Take a cooking pot & add all the ingredients under 2.( For broth). Add 4 cups of water & boil for 15 minutes.
Strain the broth & keep aside.
Step 3:
Wash & soak basmati rice for 15 minutes. Drain & keep aside.
Heat 1 tbsp ghee in a vessel , add cloves, cinnamon, cardamom, bay leaves, fennel seeds. Fry for 1 minute. Add strained fish broth, salt to taste, lemon juice. Mix well & boil.
Add rice. Mix well. Cover & cook for 8-10 minutes.
Flavourful basmati rice is ready.
Meanwhile soak a pinch of saffron in 1/2 cup water & keep aside.
Step 4
Heat 2 tbsp ghee in a deep wide vessel. Add 2 sliced onions & fry till golden brown. Remove & keep aside.
In the same pot, add dry fruits fry & keep aside.
Add 1 tbsp oil to the same pot & shallow fry all the fish slices to golden brown.
Gently remove the slices & keep aside.
Add little water to the leftover marination. Mix well.
Add this water to the same pot.
Add all the masala powders mentioned under point number 3. (Ingredients for gravy)
Add curds & mix well. ( You can add 1 tsp besan to the curd to avoid curdling) I prefer this way without besan. Mix well & boil for 2-3 minutes. Add mint & coriander leaves.
Delicious biriyani gravy is ready.
( You can add fried fish slices to this gravy and take a good boil or keep it separate. I prefer to keep it separate)
Step 5: Final assembling:
Remove 3/4th portion of gravy from the pot.
Add one layer of basmati rice.
Spread fish slices.
Add little gravy, safron water & fried onions and dry fruits, few chopped coriander & mint leaves.
Again spread one layer of basmati rice, fish slices, little gravy, fried onions & dry fruits.
Repeat this process till all the rice & gravy is utilised.
Cover & cook just for 5 minutes on a low flame.
Delicious fish biriyani is ready to use.
Serve with raitha.
Its flavourful & super delicious.
