CHICKEN FRIED RICE


This is our all time favourite dish .  I add less rice & more veggies to make this dish super healthy & delicious. 

This dish is prepared in different ways but i prefer very simple way of preparation  adding lots of veggies, chicken & eggs. It's the best dish to feed veggies to your kids.  You can add any vegetables  as per your preference.    

In this recipe, i have added finely chopped chicken sausages and chicken mince.  You can use shredded chicken too.  

We need finely chopped veggies for this dish. To save time & effort, I use electric vegetable chopper which makes my work much easier.  Veggies should be stir fried & not overcooked. Half cooked veggies always give better taste & crunch to this dish. 

RECIPE:

INGREDIENTS:

  • 200 gms cooked basmati rice
  • 1 cup finely chopped carrots
  • 1 cup finely chopped brocolli/ cauliflower
  • 1/2 cup finely chopped french beans
  • 1/2 cup finely chopped spring onion
  • 1/4 cup finely chopped capcicum
  • 1  finely chopped onion
  • 3  finely chopped green chilies
  • 1/2" finely chopped ginger
  • 6 finely chopped garlic flakes
  • 2-3 eggs
  • 2-3 chicken sausages
  • 1/2 cup chicken mince or chicken pieces
  • 2 tbsp soya sauce
  • 1 tsp green chilli sauce
  • 2 tsp white pepper powder
  • 1 tsp vinegar
  • 2-3 tbsp oil
  • Salt to taste

METHOD:

Cook basmati rice & allow it to cool well.

Chop all the veggies & keep aside. 

Heat  1 tbsp oil in a wok.  Add eggs & fry for 1 minute. Add little pepper & salt & keep aside. 

In the same wok, add 2 tbsp oil & add onion, ginger & garlic. Add green chilies & fry on a high flame. 

Add chicken & mix well. Fry for 1-2 minutes. Add salt & pepper to taste. 

Add sausages. Mix well. 

Add remaining veggies except spring onion & toss on a high flame till everything is mixed well. Add sauces, vinegar, pepper & salt to taste.  Do not overcook. 

Now add rice, eggs & spring onion. Toss well just for a minute. 

Delicious fried rice is ready to serve. 
Can be served with any  meat or veg dish of your choice.  Or just with little tomato sauce. 

Here i have served it with chicken roast. 

Here it is served with pork Szechuan.
 
You can use shredded chicken instead of chicken mince.
