BRINED JACKFRUIT STIR FRY/ BAZELLE MITAK GALLE GHARE
Brined jackfruit dishes are one of the most loved traditional delicacies of mangalorean cuisine.
Jackfruit is a seasonal fruit & is enjoyed by most us. Ripe jackfruit is used in variety of dishes and raw jackfruit too is used in the preparation of different dishes.
The raw jackfruit is brined ( preserved in salt water) for off seasonal use.
Here are the two different very easy ways of preparing brined jackfruit.
1ST METHOD
( My hubbys favourite)
RECIPE
INGREDIENTS:
- 2 cups of brined jackfruit pods
- 1 -2 tsp Red chilly powder or bafath powder.
- Pinch of garam masala powder
- 1 tsp lemon juice
- 2 tbsp oil
METHOD;
Soak brined jackfruit pods in water for minimum 1 hour and wash twice to remove the excess salt.
Cut them into thin strips .
Heat 2 tbsp oil in the frying pan.
Add jackfruit strips, masala powder and mix well.
Stir fry on a medium flame for 4-5 minutes. Don't add salt.
Squeeze little lemon juice & serve hot with boiled rice.
Delicious brined jackfruit fry is ready.
Enjoy with rice.
2ND METHOD
(My favourite)
RECIPE
INGREDIENTS:
- 2 Cups brined jackfruit pods
- 3-4 red chillies
- 1 onion sliced
- Little mustard seeds
- Little urad dal
- 2 tbsp coconut oil
- Pinch of hing
METHOD:
Soak jackfruit in water for 1 hour, squeeze and wash to remove excess salt.
Slice into desired pieces
Heat oil, add mustard seeds, allow them to splutter. Add urad dal, slit red chillies, onion & fry till translucent.
Add jackfruit pieces , mix well.
Cook on a medium flame for 4-5 minutes till its translucent.
Delicious brined jackfruit fry is ready.
Enjoy this with boiled rice.
