PATHRADE WITH MUTTON This is the most enjoyed monsoon delicacy of  South canara region.  Steamed rice cake with shredded colocasia  leaves is added to mutton/Chicken gravy & relished on a cool rainy day.  This dish is usually prepared in monsoon season as the colocasia leaves are available in abundance.  In my house , everyone loves this dish & i prepare this often as i have these special variety of colocasia plants in pots & is available throughout the year.  This particular variety is called as 'kale alu' in konkani & has lots of medicinal properties. The leaves are huge & few of them are enough for one time use.  Generally pathrade is prepared plain with ground masala without meat, but i prefer it with mutton or chicken.  The natural fat from the meat gives awesome taste & richness to the gravy.  RECIPE: INGREDIENTS FOR PATHRADE/STEAMED RICE CAKE: 1/2 kg boiled rice 1/2 tsp jeera 3 red chillies Little tamarind Salt to taste 12-

BRINED JACKFRUIT STIR FRY/ BAZELLE MITAK GHALLE GARE  Brined jackfruit  dishes are one of the most loved traditional delicacies  of mangalorean cuisine.  Jackfruit is a seasonal fruit & is enjoyed by most us.  Ripe jackfruit is used in variety of dishes and  raw jackfruit too is used in the preparation of different dishes.  The raw jackfruit is brined ( preserved in salt water) for off seasonal use.  Here are the two different very easy ways of preparing brined jackfruit.  1ST METHOD ( My hubbys favourite) BRINED JACKFRUIT STIR FRY/  BAZELLE  MITAK GHALLE GHARE   RECIPE INGREDIENTS: 2 cups of brined jackfruit pods 1 -2 tsp Red chilly powder or bafath powder.  Pinch of garam masala powder 1 tsp lemon juice 2 tbsp oil METHOD; Soak brined jackfruit pods in water for minimum 1 hour and wash twice to remove the excess salt.  Cut them into thin strips .  Heat 2 tbsp oil in the frying pan. HEALTHY MAYONNAISE Mayonnaise in just 2 minutes?  Yes, you can prepare your own healthy mayonnaise , using healthy fats in just 2 minutes.  Mayonnaise is used in lots of recipes these days & is enjoyed by most of us especially the kids.  Instead of using store brought mayonnaise which is expensive and also containing  preservatives , its better to prepare healthy mayo at home with very few ingredients. I have used only egg white, you can use whole egg.  All you need is an immersion blender and a glass bottle, wide enough to  fit  an immersion blender. The glass jar can be used to prepare  as well as to store the mayonnaise . Select good quality neutral refined oil for the preparation of mayonnaise.  Unrefined oils have strong flavour & hence not suitable for the  preparation.  I have used extra light olive oil which is a healthy option for the preparation.   You can use sunflower oil or any light neutral refined oils. You can use any suitable spices of your choice.
