CHICKEN MANCHOW SOUP


This bowlful of goodness  i feel,  is a one pot meal. Many a times we have this healthy delight as  our dinner. 

This healthy soup is loaded with nutritious freshly chopped veggies, Chicken & egg. Best choice to have as a healthy meal. 

This soup can be prepared easily & quickly if all the ingredients are readily available. Chopping veggies is much easier if you have a vegitable chopper or a food processor. 

You can add any veggies of your choice. I have added brocoli, cabbage, Carrots, baby corn, mushroom, capsicum, spring onion & cauliflower. 

You can include any meat of your choice. 

Chicken stock can be prepared by boiling Chicken bones & wings in pressure cooker along with few veggies. 

The crispy, crunchy fried noodles added on top gives extra crunch & richness to this soup. 

Here is a simple easy step by step recipe. 

Kindly add the spices, sauces & veggies as per your requirements. 


RECIPE:

INGREDIENTS:

  • 1 bowl mixed chopped veggies
  • 1 Tomato chopped
  • Chopped Chicken as per your choice
  • 1egg
  • 1tbsp soya sauce
  • 1tsp red chilly sauce
  • 1tsp pepper powder
  • 1 medium sized chopped onion
  • 1-2 chopped green chillies
  • 3-4 minced garlic flakes 
  • 200 ml Chicken stock or 1chicken stock cube
  • Salt , sugar, vinegar to taste.
  • 1tbsp cornflour
  • Fried noodles. 
  • Spring onion toppings for garnishing. 

METHOD

FRIED NOODLES:

Boil  noodles for 8-10 minutes. 

Drain water and add 1 tsp oil.

Add 2 tbsp cornflour & mix well. 

Fry these in hot oil.

Fry till golden brown. 

Remove on an absorbent paper. 
Cool & store in an airtight  container.

(You can fry in Airfryer too. I prefer frying in Airfryer)

FOR SOUP:


Heat 1tbsp ghee or oil, add 1 chopped onion, chillies & garlic. Fry till translucent. 

Add Chicken, fry for 1 minute. 

Add veggies & stir-fry on a high flame for 1-2 minutes.  Do not over cook the veggies. 

Add Chicken stock, sauces, pepper powder, salt & add extra water.
Cover & cook for 2 -3 minutes. 

Add cornflour to 50 ml water, mix well & add to soup. Stir &  boil for 1 minute. 

Finally add 1 beaten egg & keep stirring.  Add a pinch of sugar, very little vinegar & salt to taste. 


Sprinkle spring onion toppings. 


Delicious Chicken manchow soup is ready. 
Serve hot with fried noodles .
