Chicken Indad



CHICKEN INDAD 



Amshe, thikshe, godshe ( tangy, spicy, sweet) indaad is loved by most mangaloreans.  

This is my hubbys most loved chicken curry.  He enjoys this curry with soft appams. 

This curry has a unique taste & flavour.  We prefer it slightly sweeter. You can adjust the sweetness as per your preference. 

My family loves roasted potatoes in the gravy. You can skip if you don't like. 


Recipe:

Ingredients:

  • 1 kg chicken (cleaned)
  • Salt and sugar to taste
  • 1/4tsp turmeric
  • 2 potatoes (optional)
  • 2 tbsp ghee


Apply salt & turmeric to chicken pieces. Keep aside for 1 hr.  


Heat 2 tbsp ghee in a pan & add chicken & fry well till both sides are slight brown. 


Remove & keep aside . 


In the same ghee fry 2 sliced potatoes till slight brown  (Optional)


Remove & keep aside. 

Ingredients for masala:

  • 6-8 red long chillies. Here i have used Kashmiri chillies
  • 3-4short chillies (as per your choice)
  • 1/2tsp cumin seeds 
  • 1/2tsp pepper
  • 6-8 garlic flakes
  • 1/2" ginger
  • 1/2 tsp poppy seeds 
  • 5 cloves
  • 1" cinnamon stick
  • 2-3 onions
  • 1 tsp raisins
  • Little tamarind, turmeric

Method:


Grind the masala ingredients to a fine paste. 


Fry 1 medium onion (sliced) in 2 tb sp ghee to golden brown. Add masala & fry well till raw smell goes ( fry on low flame for 8-10 minutes). 


Add masala water & mix well. Prepare gravy, put salt & sugar as per your choice. 



Add fried chicken mix well & cook for 5 minutes. 


You can add fried potato slices or pieces too at the end. ( Optional)


Delicious chicken indad is ready.



Tastes awesome with soft delicious appams. 


Goes well with neeru dosa, sanna or chapathi too.
