Coorgi Pork


Coorgi Pork is the iconic pork dish from Coorg region. 

It's spicy, tangy, aromatic & so yummy!

This is the most loved and appreciated dish in my house. I usually serve this as a starter/ appetizer with drinks. 

The main ingredient which gives authentic taste to this dish is the coorgi masala powder, which is mentioned in the recipe. 

The bright blackish colour and the unique taste comes from the souring agent called " Kachampuli" which is a coorgi vinegar. 

This semi dry dish goes well as a side dish with any meal or as an appetizer/starter. This authentic coorgi dish is served in almost every single restaurant in Coorg region with super delicious rice roties. 

Recipe is easy & simple if the coorgi masala is prepared well in advance. 

Try this delicious recipe. 

Recipe:

Ingredients:

  • 1/2 kg pork
  • 2 chopped onions
  • 7-8 flakes of garlic ( chopped)
  • 1/2" ginger ( chopped)
  • 2 tsp kachampuli
  • Salt, little coriander leaves
  • Coorgi masala. 

Ingredients for coorgi masala powder:

  • 10-12 stems of curry leaves 
  • 2 tb sp coriander seeds
  • 1 tsp pepper corns
  • 1 tsp jeera
  • 8-10dry red short chillies
  • 5 cloves
  • 1" cinnamon stick
  • Pinch of mustard
  • Pinch of fenugreek /methi seeds.

Ingredients for pork marination:

  • 1/4tsp turmeric
  • 1/2 tsp salt
  • 1/2kg pork ( washed, cleaned and cut into medium pieces)


Method:

Dry roast all the above mentioned ingredients ( for masala powder) one by one on a low flame . 

Add the roasted ingredients to the grinding jar. 


Make fine powder & keep aside. 

(Kindly use chillies & pepper as per your spice requirements)

Marinate  1/2kg pork pieces with salt & turmeric & keep for a minimum one hour


Fry this marinated meat on a low flame initially ( without oil) & gradually increase the flame when fat is released. 


Fry till slight brown. 

Discard excess fat if any. Keep only the required quantity fat.  


Now add required quantity coorgi masala powder( around 2 -3 tsp), salt to taste & 1-2 tsp kachampuli. 

Mix well. Cook for 1 minute. 


Add 2 medium chopped onions, 7-8 garlic flakes chopped, 1/2" ginger chopped.  Mix well, cook for 3-4 minutes on a medium flame. 


Garnish with chopped coriander leaves. 

Delicious coorgi pork is ready.


Tastes awesome as a side with any meal or can be served as an appetizer too.

Please note:


Kachampuli

Kachampuli is a coorgi vinegar which gives authentic  taste to this dish. You can use tamarind or Lemon juice instead. But kachampuli gives lovely taste ,  colour and flavour to this dish.
